Pumpkin Pie Chia Pudding

Serves 4

INGREDIENTS

  • 1 ½ cup unsweetened almond milk
  • ¾ cup pumpkin puree
  • 1 scoop protein powder (vanilla tastes great!)
  • 10 drops Stevia (or 2 dates)
  • 1 tsp/ vanilla
  • ½ tsp cinnamon
  • ¼ tsp ground ginger or allspice
  • ¼ tsp nutmeg
  • 1/8 tsp cloves
  • ¼ cup chia seeds
  • Topping ideas: dollop plain Greek yogurt, 2 Tbls chopped walnuts or pecans or pumpkin seeds, 1 Tbls unsweetened coconut, ¼ cup chopped banana

INSTRUCTIONS

  1. Whisk all ingredients together, pour into a jar and let sit overnight.
  2. Add toppings to enjoy!
