Ingredients
- 1.5 cups low or full fat cottage cheese
- 4 eggs
- 1 cup pats
- 1 banana
- 3 Tbls. vanilla protein powder
- 2-3 Tbls. date syrup or maple syrup (optional)
- 1 tsp. baking soda
- 1 cup fresh or frozen blueberries
- Optional toppings: whipped cream, nuts, low sugar granola, vanilla yogurt
Directions
- Preheat & Prep. Set oven to 350F and spray 4 individual glass serving bowls or ramekins with oil.
- Mix. In a blender, mix together all ingredients except blueberries. If too thick to pour, add a little bit of milk.
- Pour & Bake. Pour batter evenly into 4 containers and set them on a baking dish. Add blueberries to each dish. Bake for 35-40min.
- Top. Let cool a bit and add toppings to enjoy or add lid to save for another day.
Notes
- Any fruit works here!
- Yogurt can be used instead of cottage cheese but may result in thicker batter.
