Serves 4

Ingredients

  • 1.5 cups low or full fat cottage cheese
  • 4 eggs
  • 1 cup pats
  • 1 banana
  • 3 Tbls. vanilla protein powder
  • 2-3 Tbls. date syrup or maple syrup (optional)
  • 1 tsp. baking soda
  • 1 cup fresh or frozen blueberries
  • Optional toppings: whipped cream, nuts, low sugar granola, vanilla yogurt

Directions

  1. Preheat & Prep. Set oven to 350F and spray 4 individual glass serving bowls or ramekins with oil.
  2. Mix. In a blender, mix together all ingredients except blueberries. If too thick to pour, add a little bit of milk.
  3. Pour & Bake. Pour batter evenly into 4 containers and set them on a baking dish. Add blueberries to each dish. Bake for 35-40min.
  4. Top. Let cool a bit and add toppings to enjoy or add lid to save for another day.

Notes

  1. Any fruit works here!
  2. Yogurt can be used instead of cottage cheese but may result in thicker batter.
