Ingredients
- 10 medjool dates (other varieties work just as well, but are slightly less sweet and thick)
- 10 teaspoons unsweetened peanut butter or other favorite nut butter
- 1/4 cup crushed peanuts
- 1/4 cup chocolate chunks
- 1 tsp. coconut oil
Directions
- Cut a slit lengthwise down each date, but do not cut all the way through. Remove the pit.
- Fill each date with 1 teaspoon peanut butter and a sprinkle of crushed peanuts. Set all aside onto parchment paper-lined plate while you prepare the chocolate.
- Place chocolate chunks into a bowl with coconut oil and microwave 15-20 seconds at a time, stirring in between until melted.
- Use a toothpick or chopsticks to pierce a filled date and roll it in the melted chocolate. Place it back on the parchment-lined plate and repeat with all dates.
- Sprinkle all chocolate covered dates with remaining crushed peanuts and place the plate in the fridge for 30 minutes to set and chill.
Notes
- Will keep in the fridge about a week.
- Use any nut butter, nuts or sprinkled toppings you like to add variety to your flavor!
