Ingredients
- 1 ½ Tbls olive oil
- 2 cloves garlic, minced
- 1 tsp. smoked paprika
- ½ tsp. turmeric
- 1 can chickpeas, drained and rinsed
- 6 cups spinach
- 2 Tbls. vegetable broth
- Salt & pepper to taste
Instructions
- Heat the olive oil in a skillet over medium heat. Add garlic and spices and stir 1-2 minutes until fragrant.
- Add chickpeas and stir to coat, cooking 2-3 minutes.
- Add spinach and broth, stirring over heat until spinach wilts.
- Serve with salt and pepper.
