Ingredients

  • 1 ½ Tbls olive oil
  • 2 cloves garlic, minced
  • 1 tsp. smoked paprika
  • ½ tsp. turmeric
  • 1 can chickpeas, drained and rinsed
  • 6 cups spinach
  • 2 Tbls. vegetable broth
  • Salt & pepper to taste

Instructions

  1. Heat the olive oil in a skillet over medium heat. Add garlic and spices and stir 1-2 minutes until fragrant.
  2. Add chickpeas and stir to coat, cooking 2-3 minutes.
  3. Add spinach and broth, stirring over heat until spinach wilts.
  4. Serve with salt and pepper.
