- 1 avocado
- 1/4 cup coconut milk or cream
- 1 frozen banana
- 10 mint leaves
- 1 tsp mint extract
- 1/2 tsp vanilla extract
- to serve: mint leaves, berries, cacao nibs
- Blend all ingredients together until smoothe. If too thick, add more coconut milk in 1 Tbls portions until consistency is achieved.
- Serve with desired toppings.
