Ingredients
- 4 salmon fillets, 4-6oz each
- 2 cups cubed butternut squash
- 2 cups cherry tomatoes
- 4 Tbls. olive oil
- 1 lemon, sliced
- Salt & pepper to taste
Instructions
- Preheat oven to 350.
- .Lay salmon fillets on parchment-lined baking sheet and surround with squash and tomatoes.
- Drizzle oil over fish and veggies and sprinkle with salt and pepper. Lay lemon slices over the top of everything and bake for 20-25 minutes.
