Serves 4

Ingredients

  • 4 salmon fillets, 4-6oz each
  • 2 cups cubed butternut squash
  • 2 cups cherry tomatoes
  • 4 Tbls. olive oil
  • 1 lemon, sliced
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350.
  2. .Lay salmon fillets on parchment-lined baking sheet and surround with squash and tomatoes.
  3. Drizzle oil over fish and veggies and sprinkle with salt and pepper. Lay lemon slices over the top of everything and bake for 20-25 minutes.
