Ingredients

  • 1/4 cup oats
  • 1/4 cup oat flour or almond flour
  • 1 can chickpeas, drained & rinsed
  • 1/4 cup ground flax meal
  • 1/2 cup nut butter
  • 1/4 cup date syrup or maple syrup
  • 1 egg
  • 1/2 tsp each: cinnamon, nutmeg, ground ginger, baking powder, baking soda
  • 1 tsp vanilla
  • 1 cup cranberries, divided

Directions

  1. Preheat Oven: Preheat oven to 300F.
  2. Food Processor: Pulverize all ingredients in a food processor, keeping 1/2 cup cranberries aside.
  3. Prepare & Bake: Press batter into a greased 8×8 baking dish. Press remaining cranberries over the top. Bake for 25-30 minutes.
  4. Serve: Serve warm topped with Greek yogurt or ricotta or whipped cream & any other desired fruit & nuts.
