Ingredients
- 1/4 cup oats
- 1/4 cup oat flour or almond flour
- 1 can chickpeas, drained & rinsed
- 1/4 cup ground flax meal
- 1/2 cup nut butter
- 1/4 cup date syrup or maple syrup
- 1 egg
- 1/2 tsp each: cinnamon, nutmeg, ground ginger, baking powder, baking soda
- 1 tsp vanilla
- 1 cup cranberries, divided
Directions
- Preheat Oven: Preheat oven to 300F.
- Food Processor: Pulverize all ingredients in a food processor, keeping 1/2 cup cranberries aside.
- Prepare & Bake: Press batter into a greased 8×8 baking dish. Press remaining cranberries over the top. Bake for 25-30 minutes.
- Serve: Serve warm topped with Greek yogurt or ricotta or whipped cream & any other desired fruit & nuts.
