Serves 6-8

Ingredients

  • 2 cans cannellini beans, drained and rinsed
  • 1 clove garlic
  • ½ cup plain Greek yogurt
  • 1 Tbls. lemon juice
  • Salt & pepper to taste
  • 1 cup chopped cherry tomatoes
  • 1 cup chopped cucumbers
  • ½ cup chopped Kalamata olives
  • ½ cup crumbled feta cheese
  • 1 Tbls. parsley
  • 1 Tbls. dill

Instructions

  1. In a food processor, pulse beans, garlic, yogurt, lemon and salt & pepper until smooth.
  2. Spread bean puree on a platter and top with layers of tomatoes and cucumbers, then olives and feta, then herbs.
  3. Serve with Mary’s Gone Crackers and cucumbers for dipping.
