Serves 6-8
Ingredients
- 2 cans cannellini beans, drained and rinsed
- 1 clove garlic
- ½ cup plain Greek yogurt
- 1 Tbls. lemon juice
- Salt & pepper to taste
- 1 cup chopped cherry tomatoes
- 1 cup chopped cucumbers
- ½ cup chopped Kalamata olives
- ½ cup crumbled feta cheese
- 1 Tbls. parsley
- 1 Tbls. dill
Instructions
- In a food processor, pulse beans, garlic, yogurt, lemon and salt & pepper until smooth.
- Spread bean puree on a platter and top with layers of tomatoes and cucumbers, then olives and feta, then herbs.
- Serve with Mary’s Gone Crackers and cucumbers for dipping.
