Serves 4 servings

Ingredients

  • 2 cups water
  • 1/4 cup fresh ginger, thinly sliced
  • 1/4 cup agave syrup, raw honey or allulose
  • 2 Tbls. fresh lemon juice
  • optional: mint leaves

Directions

  1. Simmer. In a small saucepan, simmer water & ginger ~10 minutes.
  2. Strain & Mix. Strain the ginger tea into a bowl, discarding ginger, and then stir in sweetener and lemon juice until well dissolved. Also add finely chopped mint leaves if desired.
  3. Pour & Freeze. Pour the liquid into a small baking dish and freeze for 1 hour.
  4. Granita. Scrape the frozen surface with a fork to create a granita texture. Freeze and repeat the scraping every 30-45minutes until the entire mixture is now a yummy granita.
  5. Serve. Serve in bowls with a lemon wedge and mint leaves to garnish.
