Serves 4-6 servings

Ingredients

  • 2 cups spinach
  • 1 cup cherry tomatoes, halved
  • 1 cup blackberries, halved
  • 1 cup feta cheese
  • Optional: 1/2 cup sliced basil leaves
  • 1-2 cups homemade croutons: 2-3 thick slices sourdough bread + 2 Tbls. olive oil + Italian herbs & sea salt to coat
  • Dressing: 2 Tbls. olive oil + 4 Tbls. balsamic vinegar + 1/2 tsp sea salt

Directions

  1. Make Croutons. Cut sourdough slices into bite-sized cubes & toss with olive oil and seasonings. Spread on a baking sheet and bake at 375 for 12-15 minutes until browned and crunchy but not burned.
  2. Whisk. In a small bowl whisk together dressing ingredients.
  3. Serve. Toss all ingredients with dressing and enjoy!

Notes

  1. You can of course use premade croutons, but homemade are actually incredibly easy and tasty and eliminate unhealthy oils.
