Serves 4-6 servings
Ingredients
- 2 cups spinach
- 1 cup cherry tomatoes, halved
- 1 cup blackberries, halved
- 1 cup feta cheese
- Optional: 1/2 cup sliced basil leaves
- 1-2 cups homemade croutons: 2-3 thick slices sourdough bread + 2 Tbls. olive oil + Italian herbs & sea salt to coat
- Dressing: 2 Tbls. olive oil + 4 Tbls. balsamic vinegar + 1/2 tsp sea salt
Directions
- Make Croutons. Cut sourdough slices into bite-sized cubes & toss with olive oil and seasonings. Spread on a baking sheet and bake at 375 for 12-15 minutes until browned and crunchy but not burned.
- Whisk. In a small bowl whisk together dressing ingredients.
- Serve. Toss all ingredients with dressing and enjoy!
Notes
- You can of course use premade croutons, but homemade are actually incredibly easy and tasty and eliminate unhealthy oils.
