Ingredients

  • 1 Tbls. avocado oil or melted ghee
  • 1 egg
  • 3 Tbls. almond flour or chickpea flour
  • 1/2 tsp. baking powder
  • pinch salt & any other desired seasoning for your English muffin

Directions

  1. Assemble. Pour oil or melted ghee into one large ramekin and swirl it around to cover entire base.
  2. Mix. Add remaining ingredients and mix well until smoothed, making sure to scrape sides and bottom to avoid clumps.
  3. Cook. Cover with a paper towel and microwave for 90 seconds. Give it a little shake (carefully because it will be hot!) and if it still looks eggy, cook another 30 seconds. Otherwise take out of microwave.
  4. Serve.Use as desired. Once cooled, slice in half lengthwise and broil or toast and top with your favorite English muffin toppings. Our personal favorite is some mascarpone cheese, smoked salmon, capers and dill!

Notes

  1. Can be stored in the refrigerator before toasting for 3-4 days.
  2. You can also add cinnamon, a pinch of coconut sugar and some raisins for cinnamon raisin English muffin!
