Ingredients

  • 1 box legume pasta (we used Kaizen rotini)
  • 1 package ground beef OR plant-based beef alternative (we used Abbots Butcher)
  • 1 jar roasted bell peppers, sliced
  • Chimichurri Sauce: 1 bunch cilantro, 1/2 cup arugula, 1 clove garlic, 1/4 cup nutritional yeast, 1/4 cup red wine vinegar, 2 Tbls. or more olive oil
  • sea salt to taste, cilantro & parmesan if desired for serving

Directions

  1. Prepare Pasta: Prepare pasta per box directions.
  2. Prepare Sauce: Pulverize ingredients in a food processor. Alternatively, can whisk for a chunkier sauce.
  3. Mix Dish: Mix together pasta, sauce and red bell pepper slices. Top with parmesan cheese, sea salt & more cilantro if desired.
