Ingredients

  • 10 medjool dates (other varieties work just as well, but are slightly less sweet and thick)
  • 10 teaspoons unsweetened peanut butter or other favorite nut butter
  • 1/4 cup crushed peanuts
  • 1/4 cup chocolate chunks
  • 1 tsp. coconut oil

Directions

  1. Cut a slit lengthwise down each date, but do not cut all the way through. Remove the pit.
  2. Fill each date with 1 teaspoon peanut butter and a sprinkle of crushed peanuts. Set all aside onto parchment paper-lined plate while you prepare the chocolate.
  3. Place chocolate chunks into a bowl with coconut oil and microwave 15-20 seconds at a time, stirring in between until melted.
  4. Use a toothpick or chopsticks to pierce a filled date and roll it in the melted chocolate. Place it back on the parchment-lined plate and repeat with all dates.
  5. Sprinkle all chocolate covered dates with remaining crushed peanuts and place the plate in the fridge for 30 minutes to set and chill.

Notes

  1. Will keep in the fridge about a week.
  2. Use any nut butter, nuts or sprinkled toppings you like to add variety to your flavor!
