Ingredients

  • 2/3 cup cannellini beans
  • 1 avocado
  • 1 Tbls. lemon juice
  •  2-3 Tbls. basil, finely chopped
  • 1/4 tsp. chili flakes or smoked paprika
  • handful arugula
  • 1 tomato, sliced
  • sea salt
  • drizzle olive oil
  • 2-4 slices high fiber bread, toasted

Directions

  1. In a bowl, use a fork to mash together beans, avocado, lemon, basil and chili flakes or paprika. If you don’t love bean texture, put the beans and avocado in a food processor to smooth, then stir in the rest.
  2. Toast your toast.
  3. Smash avocado mix over top of the toast and top with arugula, tomato slices, drizzle olive oil, sprinkle sea salt and maybe more basil and paprika. Eat right away.
