Ingredients
- 2/3 cup cannellini beans
- 1 avocado
- 1 Tbls. lemon juice
- 2-3 Tbls. basil, finely chopped
- 1/4 tsp. chili flakes or smoked paprika
- handful arugula
- 1 tomato, sliced
- sea salt
- drizzle olive oil
- 2-4 slices high fiber bread, toasted
Directions
- In a bowl, use a fork to mash together beans, avocado, lemon, basil and chili flakes or paprika. If you don’t love bean texture, put the beans and avocado in a food processor to smooth, then stir in the rest.
- Toast your toast.
- Smash avocado mix over top of the toast and top with arugula, tomato slices, drizzle olive oil, sprinkle sea salt and maybe more basil and paprika. Eat right away.
