Ingredients

  • 1 can chickpeas, drained & rinsed
  • 1 can black beans, drained & rinsed
  • 1 can black beans, drained & rinsed
  • 1 can sweet or fire-roasted corn, drained
  • 1 cup sliced radishes
  • 1 cup halved cherry tomatoes
  • 1 cup cilantro, chopped
  • 1 container favorite salsa verde (ideally a chunky version and less liquidy)
  • 1 avocado, sliced
  • sea salt to taste

Directions

  1. Stir all ingredients together and serve with avocado and sprinkle of sea salt.

Notes

  1. Feel free to replace salsa verde with pico de gallo or other favorite fiesta-flavored dressing.
  2. Use any combination of beans that you like.
