Ingredients
- 1 box legume pasta (chickpea, lentil, fava bean pasta, etc)
- 1 lb cocktail tomatoes, halved
- 8oz mozzarella balls (or thin slices)
- 1/2 cup basil
- 2 Tbls. olive oil
- 4 Tbls. balsamic vinegar or balsamic reduction
- optional: 1/4 cup pesto
- salt & pepper to taste
Directions
- Cook pasta according to package.
- Stir together cooled pasta and remaining ingredients. Pesto can be drizzled over top of the salad, mixed together or omitted.
