Ingredients

  • Paste:
  • 3 Tbls. olive oil
  • 1/2 large onion, diced
  • 3 cloves garlic, minced
  • 6 cups bone or veggie broth
  • 1 28-oz can crushed tomatoes
  • 1 cup pearl barley
  • 1 bunch kale, cut into strips
  • 1 can cannellini beans or navy beans
  • shredded parmesan to taste

Directions

  1. Sauté. Heat oil in a large stockpot, add onion, garlic, salt & pepper and stir occasionally until onion and garlic are tender.
  2. Simmer. Add broth, crushed tomatoes with their juices and barley, and bring to boil. Reduce to simmer for 20 minutes until barley is tender.
  3. Finish. Add kale and beans and cook just a few more minutes. Serve topped with parmesan.
