Ingredients

  • 1-2 Tbls olive oil
  • 4 cups shredded kale
  • 1/4 cup diced onoin
  • 1 can black beans or fat-free refried beans, drained
  • 1 can roasted corn or 1/2 bag frozen roasted corn
  • 1 cup enchilada or taco sauce
  • 1 Tbls. sauce from canned chipotle peppers
  • Taco stuff:
    • 8-10 corn tortillas or high fiber tortillas
    • cilantro
    • feta or queso fresco
    • extra lime
    • avocado slices
  • Creamy Cilantro Sauce:
    • 2 Tbls olive oil
    • 1/2 cup plain Greek yogurt
    • 3 Tbls feta cheese or queso fresco
    • 1/2 bunch cilantro
    • 1 clove garlic
    • juice of 1 lime
    • salt, pepper & jalapeno to taste

Directions

  1. Heat a sauté pan with olive oil over medium heat. Add onions and kale, stirring until softened. Then add remaining ingredients. Stir and simmer until it all looks combined and hot.
  2. In a food processor, add sauce ingredients and pulse until smooth.
  3. Heat tortillas over flame (or microwave), add taco filling, sauce and any other toppings to serve.

Notes

  1. Filling and sauce can both be made ahead of time.
  2. If you use refried beans to make more of a ‘taco mash’ and layer that with the sauce inside tiny hot tortillas they are like street tacos!
