Ingredients
- 1 lb broccoli, chopped into small florets
- 1/2 cup diced red onion
- 1/3 cup roasted sunflower seeds
- 1/3 cup dried cherries or unsweetened raisins
- 1/4 cup hemp seeds
Dressing:
- 1/2 cup plain Greek yogurt
- 2 Tbls. olive oil
- 1 1/2 Tbls. white vinegar or apple cider vinegar
- 1 Tbls. honey
- sea salt & black pepper
Directions
- Prepare dressing. Whisk dressing ingredients in a jar.
- Prepare salad. Mix salad ingredients together in a big bowl. Toss with dressing.
- Chill. Let salad chill in dressing for at least an hour before serving to let broccoli soften.
Notes
- If you prefer softer broccoli, do a quick parboil for 2-3 minutes then ice bath before preparing salad.
