Ingredients
- 4 halibut fillets, 4-6oz each
- 4 Tbls. lime juice
- 1 tsp. each salt and pepper
- ½ cup chopped cilantro
Avocado-Papaya Salsa
- 1 medium papaya, diced
- ¼ red onion, diced
- ½ cup cilantro, chopped
- 1-2 Tbls. lime juice
- 1 jalapeno, diced
- 1 red bell pepper, diced
- 1 avocado, diced
- Salt & pepper to taste
Instructions
- Preheat oven to 350.
- Mix salsa ingredients in a bowl and let sit.
- Lay halibut fillets on a parchment-lined baking sheet. Whisk together lime juice, cilantro, salt and pepper. Drizzle over fish and bake for 15 minutes.
- Serve topped with papaya salsa. Serve with cauliflower rice and/or citrus slaw.
NOTE: Mango can be easily substituted for papaya.
