Serves 4

Ingredients

  • 4 halibut fillets, 4-6oz each
  • 4 Tbls. lime juice
  • 1 tsp. each salt and pepper
  • ½ cup chopped cilantro

Avocado-Papaya Salsa

  • 1 medium papaya, diced
  • ¼ red onion, diced
  • ½ cup cilantro, chopped
  • 1-2 Tbls. lime juice
  • 1 jalapeno, diced
  • 1 red bell pepper, diced
  • 1 avocado, diced
  • Salt & pepper to taste

Instructions

  1. Preheat oven to 350.
  2. Mix salsa ingredients in a bowl and let sit.
  3. Lay halibut fillets on a parchment-lined baking sheet. Whisk together lime juice, cilantro, salt and pepper. Drizzle over fish and bake for 15 minutes.
  4. Serve topped with papaya salsa. Serve with cauliflower rice and/or citrus slaw.

NOTE: Mango can be easily substituted for papaya.
