
Serves 12 muffins
Ingredients
- 1.5 cups cassava flour
- 1/2 cup fine cornmeal
- 2 tsp. baking powder
- 2 tsp. dried oregano
- 1 tsp. garlic powder
- 1/2 tsp. sea salt
- 1/2 cup chopped pepperoni slices (plus some extra slices for toppings)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup black olives
- 2 eggs
- 1.5 cups favorite milk
- 1/4 cup marinara sauce
Directions
- Preheat and Mix. Preheat oven to 375F. Mix together all dry ingredients in a bowl. Then add pepperoni, cheese and olives to mix. In a separate bowl, mix wet ingredients then mix wet into dry.
- Bake. Divide mixture into 12 greased cupcake pan holes. If you have time, dollop a small bit of extra marinara, cheese &/or pepperoni to the top of each muffin as desired. Bake 20-25 minutes.
- Serve or Store. If storing, chill for 1 week or freeze for 3 months.
