Ingredients

  • 2 bell peppers, thinly sliced
  • 1 small onion, thinly sliced
  • 3 Tbls. olive oil, divided
  • 2-3 Tbls. taco seasoning, divided
  • 1 can oil-free refried beans
  • 1 lb wild caught shrimp
  • squeeze lime juice for shrimp
  • 1 cup cilantro
  • 8 mini tortillas (or make cassava tortillas with 1 cup cassava flour, 1/2 tsp. sea salt and water to create dough -then tortilla press)
  • Salsa, guacamole or hot sauce to serve

Directions

  1. Sauté Veggies. Sauté veggies in 1/2 of the oil then mix in taco seasoning and set aside.
  2. Sauté shrimp. Sauté shrimp in remaining oil and taco seasoning just 2-3 min per side. Add lime juice at the end.
  3. Prep Remaining Ingredients. Heat beans and prepare tortillas.
  4. Serve. Serve all ingredients on a plate so each person can put together their own tacos.
