Ingredients

  • 1.5 cups cottage cheese (low or full fat is best for this recipe)
  • 1 cup favorite tomatoes, cut into bite-sized pieces
  • 1/4 cup sliced basil
  • 1 Tbls. olive oil
  • 1 tsp. balsamic vinegar
  • sea salt & pepper to taste

Directions

  1. Prepare Bowl: In two bowl, divide cottage cheese and top with tomatoes and basil. Drizzle olive oil and vinegar over top and add sea salt and pepper to serve.
