Ingredients
- 1 head cabbage, shredded
- 4 green onions, finely chopped
- 1 bunch cilantro, chopped
- 1 bag shredded carrots
- 1-2 cups cashews
- Choose your protein: 2 cans chickpeas OR 2 cups lupini beans OR 3-4 cups shredded chicken
- Dressing: 3 Tbls. olive oil, 3 Tbls. rice vinegar, 3 Tbls. soy sauce, 1-2 Tbls. maple syrup or liquid monkfruit, 2 Tbls. sesame oil
- Toppings: sesame seeds and something crunchy like crunched beet chips, dry ramen noodles or fried shallot
Directions
- In a small jar, mix together dressing ingredients, add lid and shake vigorously.
- Toss cabbage, onions, cilantro and carrots in a large bowl along with dressing. Mix well and let sit a bit to soften cabbage. Can sit for several hours without getting wilty.
- When ready to serve, add in cashews, protein and toppings.
Notes
- You can pretty much use any veggies and protein you like. The key here is the dressing and the cabbage – it really makes this recipe pop!
