Serves 4
Ingredients
- 1 cup plain yogurt
- 1/2 cup feta cheese
- 1 Tbls. parsley or basil, chopped
- 1 tsp. dill, sumac or Zaatar seasoning
- Juice of 1/2 lemon
- 1 cucumber, sliced & chopped
- 1 large avocado, diced
- 1 can chickpeas, drained & rinsed
- 1-2 cups grape tomatoes, halved
- 1/2 cup olives, halved or quartered
- drizzle olive oil
- sea salt, capers & herbs for topping
Directions
- Create Spread: In a bowl, mix together yogurt, feta, herbs, seasonings, lemon and sea salt to taste. Spread large dollop of this mixture over 4 plates.
- Mix Salad: In a large bowl, toss together remaining ingredients except olive oil and toppings.
- Plate & Enjoy: Spoon salad mixture over each plate, drizzle with olive oil and add desired toppings.
Notes
- Can prepare spread ahead but don’t mix with salad until ready to serve.
- Use any dairy-free yogurt and feta alternative if dairy free.
