Serves 4

Ingredients

  • 1 cup plain yogurt
  • 1/2 cup feta cheese
  • 1 Tbls. parsley or basil, chopped
  • 1 tsp. dill, sumac or Zaatar seasoning
  • Juice of 1/2 lemon
  • 1 cucumber, sliced & chopped
  • 1 large avocado, diced
  • 1 can chickpeas, drained & rinsed
  • 1-2 cups grape tomatoes, halved
  • 1/2 cup olives, halved or quartered
  • drizzle olive oil
  • sea salt, capers & herbs for topping

Directions

  1. Create Spread: In a bowl, mix together yogurt, feta, herbs, seasonings, lemon and sea salt to taste. Spread large dollop of this mixture over 4 plates.
  2. Mix Salad: In a large bowl, toss together remaining ingredients except olive oil and toppings.
  3. Plate & Enjoy: Spoon salad mixture over each plate, drizzle with olive oil and add desired toppings.

Notes

  1. Can prepare spread ahead but don’t mix with salad until ready to serve.
  2. Use any dairy-free yogurt and feta alternative if dairy free.
