Ingredients
- 1/4 cup almond flour
- 2 Tbls. cocoa or cacao powder
- 1.5 Tbls. coconut nectar or date syrup or allulose or other liquid sweetener
- 1 tsp. melted coconut oil or avocado oil
- 1 tsp. vanilla
- 1 egg
- *Optional: 1 diced strawberry
- Oil spray for the mug
- Topping Ideas: Sliced strawberries, whipped cream, coconut shavings, chocolate shavings
Directions
- Whisk all ingredients including diced strawberries if desired.
- Spray a large mug or individual ramekin with oil.
- Pour batter into mug, smoothing out the top. Cover with a papertowel and microwave for 1-2 minutes until fully cooked. Serve with desired toppings.
Notes
- This recipe is so easy to double, triple or quadruple – just do them in individual mugs.
- Coconut flour will work instead of almond flour as well.
