Ingredients

  • 1/4 cup almond flour
  • 2 Tbls. cocoa or cacao powder
  • 1.5 Tbls. coconut nectar or date syrup or allulose or other liquid sweetener
  • 1 tsp. melted coconut oil or avocado oil
  • 1 tsp. vanilla
  • 1 egg
  • *Optional: 1 diced strawberry
  • Oil spray for the mug
  • Topping Ideas: Sliced strawberries, whipped cream, coconut shavings, chocolate shavings

Directions

  1. Whisk all ingredients including diced strawberries if desired.
  2. Spray a large mug or individual ramekin with oil.
  3. Pour batter into mug, smoothing out the top. Cover with a papertowel and microwave for 1-2 minutes until fully cooked. Serve with desired toppings.

Notes

  1. This recipe is so easy to double, triple or quadruple – just do them in individual mugs.
  2. Coconut flour will work instead of almond flour as well.
