Ingredients

  • 3 cups arugula
  • 1-2 tsp. truffle oil
  • 1-2 tsp. apple cider vinegar
  • 1 tsp. lemon juice
  • 1 tsp. maple syrup or allulose
  • pinch sea salt
  • Fun optional toppings to consider: pumpkin seeds, thin apple slices, dried blueberries, olive slices, slivered almonds, sun-dried tomatoes

Directions

  1. Do a quick whisk together of the oil, vinegar, lemon juice and maple syrup.
  2. Place arugula in a bowl and drizzle with the dressing mixture.
  3. Top with sea salt and it’s perfect as is, or add desired toppings.

Notes

  1. We have found the most amazing lemon vinegar reduction that is naturally sweetened by the company Olive 41 and use that instead of the lemon-vinegar-syrup mix.
