Serves 4
Ingredients
- Paste:
- 3 Tbls. olive oil
- 1/2 large onion, diced
- 3 cloves garlic, minced
- 6 cups bone or veggie broth
- 1 28-oz can crushed tomatoes
- 1 cup pearl barley
- 1 bunch kale, cut into strips
- 1 can cannellini beans or navy beans
- shredded parmesan to taste
Directions
- Sauté. Heat oil in a large stockpot, add onion, garlic, salt & pepper and stir occasionally until onion and garlic are tender.
- Simmer. Add broth, crushed tomatoes with their juices and barley, and bring to boil. Reduce to simmer for 20 minutes until barley is tender.
- Finish. Add kale and beans and cook just a few more minutes. Serve topped with parmesan.
