Serves 1 loaf or 2 mini loaves

Ingredients

  • 1/3 cup olive oil
  • 1/4 cup coconut sugar
  • 1/4 cup applesauce
  • 2 eggs
  • 2 mashed bananas
  • zest AND juice from 1 orange
  • 1 tsp. vanilla
  • 1 1/4 cups almond flour
  • 1/2 cup arrowroot powder
  • 2 Tbls. coconut flour
  • 1 tsp. baking soda
  • pinch salt
  • 1 tsp. cinnamon or pumpkin pie spice
  • 1 cup fresh cranberries
  • 1/4 cup toasted walnuts or pecans

Directions

  1. Preheat Oven: Preheat oven to 350F.
  2. Mix Wet Ingredients: In a large bowl, mix together olive oil & coconut sugar to blend. Add eggs, vanilla, mashed bananas, applesauce, orange juice & orange zest and whisk until well mixed.
  3. Mix Dry Ingredients: In a separate small bowl, mix together almond flour, arrowroot, coconut flour, baking soda, salt & cinnamon.
  4. Combine: Pour dry ingredients into wet and mix until just combined. Fold in cranberries.
  5. Bake: Grease a loaf pan and pour batter into it. Smooth the top and sprinkle with nuts. Bake for 35-45 minutes or until toothpick comes out clean.

Notes

  1. Can be frozen if wrapped tightly in foil.
  2. Makes 2 mini loaves beautifully but only needs 30 minutes of bake time.
  3. Our favorite is to serve this topped with thick Greek yogurt for added protein.
