Serves 1 loaf or 2 mini loaves
Ingredients
- 1/3 cup olive oil
- 1/4 cup coconut sugar
- 1/4 cup applesauce
- 2 eggs
- 2 mashed bananas
- zest AND juice from 1 orange
- 1 tsp. vanilla
- 1 1/4 cups almond flour
- 1/2 cup arrowroot powder
- 2 Tbls. coconut flour
- 1 tsp. baking soda
- pinch salt
- 1 tsp. cinnamon or pumpkin pie spice
- 1 cup fresh cranberries
- 1/4 cup toasted walnuts or pecans
Directions
- Preheat Oven: Preheat oven to 350F.
- Mix Wet Ingredients: In a large bowl, mix together olive oil & coconut sugar to blend. Add eggs, vanilla, mashed bananas, applesauce, orange juice & orange zest and whisk until well mixed.
- Mix Dry Ingredients: In a separate small bowl, mix together almond flour, arrowroot, coconut flour, baking soda, salt & cinnamon.
- Combine: Pour dry ingredients into wet and mix until just combined. Fold in cranberries.
- Bake: Grease a loaf pan and pour batter into it. Smooth the top and sprinkle with nuts. Bake for 35-45 minutes or until toothpick comes out clean.
Notes
- Can be frozen if wrapped tightly in foil.
- Makes 2 mini loaves beautifully but only needs 30 minutes of bake time.
- Our favorite is to serve this topped with thick Greek yogurt for added protein.
