Serves 24 mini muffins
Ingredients
- 1.5 cups cottage cheese
- 4 eggs
- 1.5 cups almond flour
- 1/2 cup Strawberries & Cream Protein Powder (Just Ingredients brand)
- 1 tsp vanilla
- pinch salt
- 1 cup mini chocolate chips
- 1/2 cup unsweetened coconut flakes
Directions
- Mix. Mix all ingredients together in a large bowl.
- Prep muffin tin. Spray a mini muffin tin with oil spray then scoop batter into each space. There is no gluten in this so they won’t rise much and you can fill them to the top.
- Bake. Bake at 350F for 25-30 minutes.
Notes
- If you don’t have strawberry protein powder feel free to use vanilla or chocolate instead, then throw in 1/2 cup diced strawberries with the chocolate chips and ditch the coconut flakes.
