Ingredients
- 1 can chickpeas, drained & rinsed
- 1 can black beans, drained & rinsed
- 1 can black beans, drained & rinsed
- 1 can sweet or fire-roasted corn, drained
- 1 cup sliced radishes
- 1 cup halved cherry tomatoes
- 1 cup cilantro, chopped
- 1 container favorite salsa verde (ideally a chunky version and less liquidy)
- 1 avocado, sliced
- sea salt to taste
Directions
- Stir all ingredients together and serve with avocado and sprinkle of sea salt.
Notes
- Feel free to replace salsa verde with pico de gallo or other favorite fiesta-flavored dressing.
- Use any combination of beans that you like.
