Ingredients
- 1 tsp. grass fed butter
- 1/2 cup almond flour
- 1/4 cup vanilla protein powder
- 6 Tbls. arrowroot starch
- 1 tsp. vanilla
- 6 eggs
- 1 cup coconut milk
- For Chia Berry Flavor: use only 3/4 cup coconut milk and add in 1 pouch Mama Chia berry blend
- For Apple/Pear Swirl: add 1 tsp cinnamon to mixture and top with thin slices of apples or pears. Sprinkle with nutmeg to serve
- Vanilla Protein Sauce: 1 cup plain kefir + 1-2 scoops vanilla protein powder to desired consistency
Directions
- Heat oven to 400F. Place 1 tsp butter into a cast iron skillet and set in oven while it heats.
- Whisk together all ingredients, adding chia pouch if following that flavor profile.
- Use an oven mitt to remove cast iron skillet from oven. Pour mixture into skillet and add fruit slices if following Apple/Pear version.
- Bake for 15 minutes. While baking, stir together vanilla protein sauce.
- Let cool 5-10 minutes before slicing into pizza shaped slices. Top with sauce and more fruit or nutmeg/cinnamon to serve.
