Serves: 4-6

Ingredients

  • 1 tsp. grass fed butter
  • 1/2 cup almond flour
  • 1/4 cup vanilla protein powder
  • 6 Tbls. arrowroot starch
  • 1 tsp. vanilla
  • 6 eggs
  • 1 cup coconut milk
  • For Chia Berry Flavor: use only 3/4 cup coconut milk and add in 1 pouch Mama Chia berry blend
  • For Apple/Pear Swirl: add 1 tsp cinnamon to mixture and top with thin slices of apples or pears. Sprinkle with nutmeg to serve
  • Vanilla Protein Sauce: 1 cup plain kefir + 1-2 scoops vanilla protein powder to desired consistency

Directions

  1. Heat oven to 400F. Place 1 tsp butter into a cast iron skillet and set in oven while it heats.
  2. Whisk together all ingredients, adding chia pouch if following that flavor profile.
  3. Use an oven mitt to remove cast iron skillet from oven. Pour mixture into skillet and add fruit slices if following Apple/Pear version.
  4. Bake for 15 minutes. While baking, stir together vanilla protein sauce.
  5. Let cool 5-10 minutes before slicing into pizza shaped slices. Top with sauce and more fruit or nutmeg/cinnamon to serve.
