Ingredients

  • 2 slices Primal Bakery Protein Bread (or any high fiber, low glycemic bread)
  • 2 Tbls. favorite hummus
  • 1 Tbls. pesto
  • 1/2 avocado
  • handful spinach leaves
  • 1 small tomato, sliced
  • 1 jarred roasted red bell pepper
  • 2 Tbls. shredded carrot
  • several slices red onion
  • drizzle balsamic vinegar or reduction
  • other options: add sliced turkey or tempeh for more protein; add sliced mozzarella and grill for panini style.

Directions

  1. Spread & Layer. Spread hummus on both slices of bread, then pesto then all remaining ingredients, ending with drizzle balsamic.
  2. Top & Eat. Top with remaining slice bread and enjoy as is or place in a panini press.
