Ingredients
- 2 slices Primal Bakery Protein Bread (or any high fiber, low glycemic bread)
- 2 Tbls. favorite hummus
- 1 Tbls. pesto
- 1/2 avocado
- handful spinach leaves
- 1 small tomato, sliced
- 1 jarred roasted red bell pepper
- 2 Tbls. shredded carrot
- several slices red onion
- drizzle balsamic vinegar or reduction
- other options: add sliced turkey or tempeh for more protein; add sliced mozzarella and grill for panini style.
Directions
- Spread & Layer. Spread hummus on both slices of bread, then pesto then all remaining ingredients, ending with drizzle balsamic.
- Top & Eat. Top with remaining slice bread and enjoy as is or place in a panini press.
