Ingredients

  • 1 box legume pasta (chickpea, lentil, fava bean pasta, etc)
  • 1 lb cocktail tomatoes, halved
  • 8oz mozzarella balls (or thin slices)
  • 1/2 cup basil
  • 2 Tbls. olive oil
  • 4 Tbls. balsamic vinegar or balsamic reduction
  • optional: 1/4 cup pesto
  • salt & pepper to taste

Directions

  1. Cook pasta according to package.
  2. Stir together cooled pasta and remaining ingredients. Pesto can be drizzled over top of the salad, mixed together or omitted.
