Ingredients

  • 1 cup plain kefir
  • 2 Tbls. favorite vanilla protein powder
  • 2 Tbls. basil seeds
  • 2 tsp. cinnamon, divided
  • 1/4 cup applesauce
  • 1 Tbls. pepitas
  • 1 Tbls. chopped walnuts
  • 1 tsp. dried coconut sugar or monkfruit

Directions

  1. Prepare pudding: In a lidded jar, whisk together kefir and protein powder, then stir in basil seeds and 1 tsp. cinnamon. Stir well, let sit a few minutes, then stir again before putting on lid and chilling overnight.
  2. Prepare crumble. Easy method is simply to mix together nuts, seeds, cinnamon and sweetener in a lidded container. Longer option but oh-so-delicious is to take that nut-seed-sweetener mix and sauté in a dry skillet over low heat for 5-10 minutes or until fragrant but not burned. Be sure to watch, stir and remove before burning. Let cool before setting aside in a lidded container.
  3. Serve. When ready to eat, top gelatinized basil seed pudding with applesauce and then nut-seed crumble.
