Ingredients
- 1 banana, mashed
- 1 egg, whisked
- 3 Tbls. almond or chickpea flour
- 1 Tbls. ground flaxseed
- 1/2 tsp. vanilla or almond extract
- 1/4 tsp. each cinnamon & nutmeg
- 1 Tbls. allulose or date syrup
- 1 large strawberry, mashed with a fork
- 1-2 strawberries for serving
- 2-3 Tbls. plain Greek yogurt or whipped cream for serving
- 1 tsp. chopped pecans or walnuts for serving
Directions
- Mix. Spray a large mug or ramekin with oil spray, then mix together all ingredients except those for serving inside the mug.
- Microwave. Cover mug with a paper towel and set in microwave. Cook for 2-2.5 minutes.
- Enjoy! Add toppings and enjoy as breakfast, dessert or snack!
Notes
- Feel free to play around with other fruits. The mashed banana is key but other fruits can replace the strawberry as desired.
