Serves 2-3
Ingredients
- 4 Tbls. tamari sauce
- 3 tsp. pureed or freshly grated ginger
- 1 tsp. honey
- 1 tsp. sriracha
- 1 tsp. sesame oil
- 1 Tbls. avocado oil
- 2 cloves garlic, minced
- ¼ cup chopped onion
- 1 cup sliced mushroom
- 1 medium bell pepper, sliced
- 12-15 medium deveined shrimp
- 2 medium zucchini, spiralized (or 1 container zucchini spirals)
- Optional toppings: chopped green onion, additional Sriracha, slivered almonds
Instructions
- Whisk together tamari sauce thru sesame oil and set aside.
- Heat a large wok or skillet over medium-high heat. Add avocado oil, garlic and onion and sauté 1-3 minutes until fragrant but not burned.
- Add mushroom, bell pepper and shrimp and sauté another 5-6 minutes. Add zucchini noodles and sauce and cook just 1-3 minutes, not letting the zucchini get too soft or watery.
- Remove from heat and serve immediately with desired toppings.
NOTE: Any ready-made stir fry mix will work in this recipe, as well as other protein swaps like chicken or beef.
