Serves 2-3

Ingredients

  • 4 Tbls. tamari sauce
  • 3 tsp. pureed or freshly grated ginger
  • 1 tsp. honey
  • 1 tsp. sriracha
  • 1 tsp. sesame oil
  • 1 Tbls. avocado oil
  • 2 cloves garlic, minced
  • ¼ cup chopped onion
  • 1 cup sliced mushroom
  • 1 medium bell pepper, sliced
  • 12-15 medium deveined shrimp
  • 2 medium zucchini, spiralized (or 1 container zucchini spirals)
  • Optional toppings: chopped green onion, additional Sriracha, slivered almonds

Instructions

  1. Whisk together tamari sauce thru sesame oil and set aside.
  2. Heat a large wok or skillet over medium-high heat. Add avocado oil, garlic and onion and sauté 1-3 minutes until fragrant but not burned.
  3. Add mushroom, bell pepper and shrimp and sauté another 5-6 minutes. Add zucchini noodles and sauce and cook just 1-3 minutes, not letting the zucchini get too soft or watery.
  4. Remove from heat and serve immediately with desired toppings.

NOTE: Any ready-made stir fry mix will work in this recipe, as well as other protein swaps like chicken or beef.
