Ingredients

  • 1 Tbls avocado oil
  • 2 bell peppers, thinly sliced
  • 1/2 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp. cumin
  • 1 Tbls. Italian herbs
  • 1 small jar tomato or pasta sauce
  • 2-3 handfuls spinach
  • 4 eggs
  • Topping options: feta cheese, parsley, sea salt, avocado

Directions

  1. Heat avocado oil in a large sauté pan, then add onion & bell pepper & saute until softened.
  2. Add sauce, seasonings & spinach, stir well and bring to a simmer.
  3. Once spinach has wilted, make 4 wells and crack an egg into each. Cover and simmer ~8 minutes or until eggs are set to your liking.
  4. Serve eggs along with hefty spoonfuls of the sauce and veggie mix. Crusty toast also makes an excellent addition.

Notes

  1. Add any veggies you like!
  2. Mix up flavor here by replacing pasta sauce with salsa and topping with cilantro. You could even serve with a tortilla instead.
