Ingredients
- 1 Tbls avocado oil
- 2 bell peppers, thinly sliced
- 1/2 onion, diced
- 2 garlic cloves, minced
- 1 tsp. cumin
- 1 Tbls. Italian herbs
- 1 small jar tomato or pasta sauce
- 2-3 handfuls spinach
- 4 eggs
- Topping options: feta cheese, parsley, sea salt, avocado
Directions
- Heat avocado oil in a large sauté pan, then add onion & bell pepper & saute until softened.
- Add sauce, seasonings & spinach, stir well and bring to a simmer.
- Once spinach has wilted, make 4 wells and crack an egg into each. Cover and simmer ~8 minutes or until eggs are set to your liking.
- Serve eggs along with hefty spoonfuls of the sauce and veggie mix. Crusty toast also makes an excellent addition.
Notes
- Add any veggies you like!
- Mix up flavor here by replacing pasta sauce with salsa and topping with cilantro. You could even serve with a tortilla instead.
