Ingredients

  • 3 Tbls. hemp seeds or finely chopped walnuts, for rolling
  • ½ cup unsweetened cacao powder or cocoa powder
  • ¼ cup almond meal
  • 2 Tbls. arrowroot starch
  • 1 Tbls. ground flaxseed
  • ¼ tsp. salt
  • ½ cup raw almond butter (or any unsalted nut or seed butter)
  • 3 Tblp. maple syrup
  • 2 Tbls. coconut oil
  • 1 tsp. pure vanilla extract

Directions

  1. Prepare ingredients. Place hemp seeds or finely chopped walnuts on a small plate. You will use this for rolling the bites at the end. Set aside.
  2. Prepare equipment. Line a small cookie tray or other freezer safe flat dish with non-bleach parchment paper. Set aside.
  3. Mix. In a medium sized mixing bowl, combine dry ingredients (cocoa powder, almond meal, arrowroot starch, ground flax seed, and salt). Stir in wet ingredients until well blended (almond butter, maple syrup, coconut oil, and vanilla extract).
  4. Scoop & Roll. Using a medium sized cookie dough scoop, create 1.5 Tablespoon portions of dough and form into balls. Dip half of each ball into hemp seed or walnut mixture. Place each ball on lined cookie tray, making sure they don’t touch each other. Place tray in freezer for 2 hours before enjoying.  If freeze longer and they are solid, let sit at room temperature for 5 minutes before enjoying.
