Serves 3-4

Ingredients

  • 3-4 eggs (2 eggs will work but we like to have extra for the pan)
  • 1 cup coconut milk (or any favorite milk, but coconut makes this amaaaazing)
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2-3 tsp cinnamon
  • 1/2 tsp nutmeg
  • 6-8 slices of high fiber bread (or just 3-4 slices if very thick from a baguette)
  • Coconut oil or ghee for the pan
  • Topping Ideas: Greek yogurt mixed with defrosted berries or PB powder, homemade whipped cream, ricotta cheese, drizzled nut butter, drizzle maple syrup, berries or other fruit, orange or lemon zest

Directions

  1. Whisk. Whisk together all ingredients except bread in a shallow dish.
  2. Dip. Dip each bread slice in the egg mixture, making sure to fully coat all sides. You can even let the bread sit in the mixture a while if the slices are thick.
  3. Cook. Heat oil or ghee in a flat sauté pan over medium heat. Add bread slices to cook (you may have to work in batches and add a little more oil in between) and pour some extra egg mixture over the top of each slice so they get real eggy. Cook 3-5 minutes per side until golden on each side. Make sure you use up all that yummy egg mixture!
  4. Serve. Serve with favorite toppings!

Notes

  1. Pre-cooked French toast can be frozen for a super fast breakfast later on! Simply toast frozen slices and enjoy!
  2. Play with extracts here! Lemon or chocolate extracts make this delish!
