Serves 4

Ingredients

  • 1lb raw, peeled & deveined wild shrimp
  • 1 tsp. arrowroot or tapioca flour
  • 2 tsp. garlic powder
  • 1/2 tsp sea salt
  • 3 Tbls. avocado or olive oil, divided
  • 1 cup shredded or diced carrot
  • 1/2 cup diced celery
  • 1 small bell pepper, diced
  • 1 bunch scallions, thinly sliced
  • 1 Tbls. Cajun seasoning*
  • 24oz cauliflower rice
  • lime juice & sea salt to serve

Directions

  1. Dredge. Mix arrowroot, garlic powder & sea salt in a small bowl and toss in shrimp to coat.
  2. Sauté Shrimp. Heat 1 Tbls. oil in a pan over medium heat. Add shrimp and cook 2-3 min per side then remove to another dish.
  3. Sauté Veggies. Heat remaining oil in the pan and add carrots, celery & bell pepper. Toss intermittently while cooking for 5-10min until softened and caramelized.
  4. Soften Cauliflower Rice. Add cauliflower rice to veggie mixture and continue stirring and cooking for another 2-3 minutes just to soften the cauliflower. About 1 minute before finishing, add Cajun seasoning and toss well.
  5. Season & Serve. Toss cauliflower rice mixture with squeeze of lime juice and sprinkle sea salt to desired liking and serve with shrimp on top.

Notes

  1. Trader Joe’s and several other brands have ready-made Cajun seasoning. If you cannot find any, make your own with 1tsp each paprika, garlic powder & sea salt along with 1/2 tsp each cayenne, ground pepper, thyme, oregano & onion powder.
  2. If higher carbs are needed, add cooked jasmine rice alongside or in place of cauliflower rice.
  3. Any vegetables work in this dish so feel free to play with other types.
