Ingredients
- 1/4 cup lime juice
- about 10 mint leaves
- 1/4 cup coconut water
- 12oz sparkling water, club soda or tonic
- Optional: lime, orange or lemon bitters
- Also optional: 1/2 package of LMNY citrus flavored electrolye mix
Directions
- Infuse the lime juice. Mash the mint leaves in the bottom of a mason jar and add lime juice. Give a stir and let sit at least an hour.
- Assemble. In 2 cocktail glasses, divide the mint-infused lime juice (get those mint leaves into each glass too), then divide the coconut water into each glass along with dividing the 1/2 pack LMNT powder if using, and stir. Top with sparking beverage of choice, add some ice and finish with a few drops of bitters if desired. Garnish with more mint and a lime wedge for flair.
Notes
- The bitters add a little flavor but also help prepare the gut for digestion, which is great if this mocktail is a before-meal bevvie for you!
- LMNT powder adds sweetness and electrolytes – but it is totally optional.
