Slow Cooker

Crockpot Mojo Pork

Serves 6

3/4 Lb. Pork Tenderloin
3/4 C. Water
1 Chicken Reduced Sodium Bullion
1 Onion, Quartered
1 Jalapeno, Seeded & Quartered
1 Orange, Juiced
2 Limes, Juiced
2 Lemons, Juiced
8 Cloves Garlic
1/2 Tbsp. Salt
1 Tsp. Oregano
1/2 Tsp. Black Pepper
1/2 Tsp. Cumin
1/2 Tsp. Paprika

  1. Lightly coat the inside of a large skillet with non-stick cooking spray and heat over a high heat. Add in the pork tenderloin once the pan is hot and sear on all sides. This helps to remain moisture and flavor while cooking.
  2. Combine the remaining ingredients into the bottom of the slow cooker.
  3. Add the seared pork tenderloin into the crock pot, cover and cook on low for 8-10 hours or on high for 4-6 hours; until the pork is tender and falling apart.
  4. Once done, remove the pork from the crock pot, shred and enjoy right away with grilled veggies and pico de gallo!
