Serves 1-2

Ingredients

  • 1 cup cottage cheese (whole or low fat, not non-fat)
  • 2 Tbls. allulose or raw honey
  • zest & juice of 1 lime
  • Optional Topping Ideas: 1 Tbls crushed walnuts, pepitas or keto granola, unsweetened coconut flakes, crushed graham cracker, melted white chocolate chips

Directions

  1. Blend. Puree all ingredients in a blender until smooth.
  2. Freeze (optional). Scrape into an individual dish (or two), smooth out the top and freeze for about an hour. This step is optional as you can eat it without freezing and it is delicious. Freezing creates a hard shell on top that adds some topping crunch when you eat it.
  3. Enjoy. Top with desired toppings and indulge.
