Serves 10


  • 1 container low fat cottage cheese
  • ½ bag spinach
  • 2 Tbls. olive oil
  • 3 cloves garlic, minced (or 1 Tbls. Pureed garlic)
  • Juice of 1 lemon
  • Lots of fresh ground pepper and garlic seasoning mixes


  1. Saute garlic and spinach in olive oil until soft and wilted.
  2. Add cottage cheese, spinach, lemon juice and seasonings to food processor and blend until smooth.
  3. Add more pepper, salt, seasoning, garlic or lemon to taste.
  4. Serve with raw zucchini slices or other veggies as dippers.
