- 1 container low fat cottage cheese
- ½ bag spinach
- 2 Tbls. olive oil
- 3 cloves garlic, minced (or 1 Tbls. Pureed garlic)
- Juice of 1 lemon
- Lots of fresh ground pepper and garlic seasoning mixes
- Saute garlic and spinach in olive oil until soft and wilted.
- Add cottage cheese, spinach, lemon juice and seasonings to food processor and blend until smooth.
- Add more pepper, salt, seasoning, garlic or lemon to taste.
- Serve with raw zucchini slices or other veggies as dippers.
